What approach to use when wanting to do a full audit of our jira cloud instance

We're looking to snapshot audit of our jira cloud instance. Essentially mapping out projects and their associated workflows, workflow schemes, field configurations, issue types, etc. We've never attempted this before as we have over 200 projects, so I'm keen to learn from more experienced admins what methods they have used to get this data. I don't think the backup would help as it's xml. Ideally I think we want a csv.

Welcome to the Atlassian Community.

I think the easiest way would be to look for an app in the Marketplace.

Ex. this one https://marketplace.atlassian.com/apps/1230761/doctor-for-jira?hosting=cloud&tab=overview

(I have no experience with this one)
