I'm wondering about benefit or disadvantage of not using Jira default screen.

The default screen has most of the common system fields. There is real disadvantage of using it but most likely you would have your own set of fields in your issue type (and project) and you may not want to use all the system fields for all the cases.
In any case Jira gives you flexibility to modify the screens. I would personally not modify any default configuration but create a copy of them for specific customisations.

The benefit is probably simply "standardisation, it'll work the same for everything", the disadvantage is probably "it doesn't do what this team needs".
I don't think this question really works when framed as "advantage / disadvantage" or "pros and cons". I think there's another question behind it, but I do not want to guess at what the real question is. Could you explain more?

You definitely read my mind. I know the different between using default setting and custom setting. But I'm more curious about:
- Performance level: default setting vs Custom setting which one will make the page loading faster?
- Migration: easier to move the default than custom? less work?

Performance - not a problem, unless you decide you're going to let people run riot with adding all sorts of custom stuff that they don't really need. If you're going to do that though, screens are way down on the list of problems you'll have with performance. Not using the standard one is not a direct problem, you'll just be able to clear a load of custom ones out after you fix the causes of your performance issues.
Migration - again, not a problem directly, you're more likely to have problems if your screens use non-standard custom-fields, but in those cases, you should be solving the problems with the field, not the screen.
