Is there any negative impacts to converting a pointed subtask to a story in a different sprint?

@JanaW there is no negative impact of this action. Instead Atlassian says that it is the best way to deal to situation when you have a story with unclosed subtask in a sprint.

Unclosed subtask will not give you a possibility to close a sprint. So you should convert subtask to a story and move it to a backlog or to other sprint. 

It suggested that you've made some shippable piece of work in parent story and the rest in subtask is a piece of work that can be shipped independetly.
