Welcome to the Atlassian community.
You could use Automation Rules to copy the Fix Version information from the parent issue to the subtask whenever that information is changed in the parent issue.
Note there are limitations on how many rule executions you can have each month. Review the information on those limits and determine if your instance would be at risk of hitting those limits with the addition of these Automation Rules.
