We have JIRA and Confluence server versions running currently and there are discussion going on to migrate them to either DC or SaaS version.
My question is, what happens if we don't migrate server versions to either DC or SaaS version? anything will break? or it will continue to work without support and update?
Same question regarding the plugins as well.

Welcome to the Atlassian community.
A Jira Server license is perpetual. The system will continue to operate in its current manner after the license expires, but you will no longer be able to get support from Atlassian for it.
If your plugins are not providing integration to external products, they also should continue to work. However you should confirm that by contacting the vendor of each plugin.
If the plugins provide integration with an external product, then updates to the external product may eventually result in the plugin no longer working.
Hi @Manjunath MP welcome to the community. Here is Atlassian Support's End of Life Policy that I found. As I'm reading it, and anyone can correct me if I'm wrong, but if you choose not to upgrade/migrate you wouldn't have support for your Server application.
