What is the best down load from Jira to get year-to-date information on the number of Projects

I work for Kelley Business School at Indiana University. We have a new University Marketing Director, and she has tasked us with starting to forecast our demand and resource capabilities. To do that properly, using year-to-date information from Jira would be important.  

I am trying to download the total projects entered into Jira over the last two to three years by months if possible.  I would love to get information on the date created and the date that the project was finalized.  (looking to get information on performance to plan)

What download feature in Jira would be the best to use, and could you offer guidelines on how to perform this task best?

My $.02… What you are describing, @Bogner, William Benjamin , is Project Portfolio Management. Aka, PPM.

While Jira out of the box has some PPM capabilities, it was, IMO, fundamentally architected for project management on the granular scale. 

To produce a report like the one you describe I think you will want to look at the PPM solutions available on the Atlassian Marketplace to discover which one best to meet your needs.
