What is the path to find that is user is added to how many projects in Jira software.

I want to know the user has been added to how many projects and he is able view how many projects over the Jira Software.

You can  Mimic(login as same user) the user account , If it is DC you have to have an Script runner plugin, If it is in cloud  then user management click on user Login as user.

If it is multiple users If it is in DC you can get the Data from DB Level or if it is in cloud you can created a ticket with Atlassian so they can fetch the data
