What is the process to acquire and apply the point-releases or patches from Atlassian for long-term-support version. Thanks!

that's pretty simple. Just go to the download page and download the version you want to update to.
Then you can run the installer and it will ask you if want to install a new application or if you want to upgrade the existing one.
You just have to make sure, that your license is still valid, otherwise you will get problems after the update.

So, regardless if we are on a long-term-support version or not, the process will still be similar if you want to upgrade to a fixed version in term of vulnerabilities. Just an example, say the long-term-support version is version 8.5.0 and I'm on that version right now and there is a vulnerability for this version and Atlassian released a fix for the vulnerability on version 8.5.1. In this case, I still need to upgrade to 8.5.1? What if I want to stay with 8.5.0, how will I be able to remediate the vulnerability? Please confirm if my understand is correct. If my understanding is correct, I want to understand what will be the benefit of being in the long-term-support version in terms of remediating vulnerabilities. Thank you!

Yes, that's right, you'll have to go to 8.5.1 in that case. But this are only minor updates and does not require an update of the major version
