What issue types are available in a Jira Agile project by default ? 

Is it ?

Epic, Story, Task, Bug, and Subtask

OR

• 'Epic'
• 'Story'
• 'Technical Task' (sub-task)

I can't see anywhere in the help that this is explained or documented ......

Depends on the project type, and version of JIRA Agile/Software.  In the JIRA I'm looking at though:

Scrum and Kanban:

•  Bug
•  Task
•  Sub-task
•  Story
•  Epic

Simple development:

•  Bug
•  Task
•  Sub-task
•  Improvement
•  New Feature
•  Epic

Remember these are just defaults by project type.  There's no harm in changing them to what you need.
