Where and how change names in issues

Hi,

I am starting to implement recruitment process under Jira.

I would like to have 2 levels: Vacancy and Candidates. Candidates will be added to particular valances. 

I would like to ask how should I edit current options:

how and where can I eddid it under Jira ??

Yes, I would like to do this...

as far as I remember one of the Jira instance was configured in this manner - It was about 1 year ago and it was configured by someone from IT... now I need to take over this stuff :D

Any chance that was on a server or data center instance and not on Atlassian Cloud?

I dont know - I was not my resp then..

Now I would like to setup similar solution for recru team but this is blocking me...

Maybe it's any idea how could I overcome this issue ?
