If I'm in a project "Open issues", "All issues" view, where is the option to enter the edit screen for an issue? Edit is an available option for issues from a search list, but not from the project. Not all fields/workflow options are the same between the two views.

I assume you are talking about a new ticket view. There is no edit in the new view. You can edit all the fields directly or you can still switch to the old view.
I have a custom field on my ticket which I can't seem edit without switching to the old UI? This seems odd.
