Hi there, If I am using Jira as a project management tool, where or how can I find records for historical reporting of projects in Jira?
After the project is Done it will be still presented in the system. The same project can be reused for future work. You can hide a project, but it will be visible to people with admin permissions.
Regarding the history report, as far as I know, there is not a special history report for projects. But as the project is a collection of issues, you can look for the issue history log for the project. You can check the Issue History app from my team. The report allows filtering issues by project or other options in chronological order.

We are wondering once projects or work initiatives are completed, is there a way to look back into the Jira repository and retrieve project details like: Project Name, Start Date, End Date, # of Sprints, etc. ? What happens to project work after its DONE? Does it fall off the project board and get archived or does it stay visible forever?

Yes - The issues are hidden from the project Board to reduce extra noise for future and active activity, but everything remains in the system.
In the project itself, you have various reports you can view like the sprint report where it will default to the current sprint, but you can go back as far as you need to review historical sprints.
Outside of that, you can navigate to Filters >> Advanced Issue Search to query issues as needed. Those filters can be saved and leveraged for any dashboards you wish to create.
