While moving issue from one project to another, how can I make field available in move screen

We have multiple projects. I am moving issue from one project to another. In between of that process we have update field screen where we see bunch of fields to fill out for destination project/issue type. Now I want to remove few fields from this screen and add few. How can I do that?

You can't do this.  Moving issues is not something that should be part of an operating procedure, it should only be done for housekeeping, migration and in the rare times that an issue has been created in the wrong place.

Jira tries to keep move as simple as possible - it only asks for the absolute minimum you need to do to change the structure of the issue, and has no options for customising the process because it is not something you should be doing often.
