I have a kanban board that has a "Done" column with statuses properly mapped to them. However, items are still showing after it's been 2 weeks. We are using fix versions and releasing them. I removed the kanban board sub-filter as I wanted it to show all items once moved to a done status for 2 weeks. Do I need add something this in the sub filter to get this to show properly?

What do you have configured under the Kanban config (Hide completed issues older than)?

That means your issue do not match the rule you set, someone may have updated the issue since you transitionned the issue to the last column.

You said you removed the subfilter, so I'm assuming this is a Kanban board for a Company Managed project.
Is the Done column the one farthest to the right on the board?
Do you have the Hide Completed option set?
Have the issues been updated within the past 2 weeks? The hiding is based on the Last Updated date for issues in the right-most column. If the issue has been updated in some way in the past 2 weeks it will not be hidden.

@Trudy Claspill Correct. The "Done" column is the farthest right and the Hide completed items is set to 2 weeks.
The item in questions was moved to a "Resolved" status on 12/15/22 @ 8:57am and the last updated date is 1/11/23 @ 9:34am. Are you saying that since this item was updated, even though it Resolved, it is showing up in the column still?
If that is true, would there be a way to ignore update dates and just look at the status only?

Yes, if the item was updated within the past 2 weeks, it will be shown in the right-most column.
There is not an option to ignore Updated dates when hiding "completed" issues.

As a work around you could add a quick filter that, when activated, would hide issues with a Resolved date more than two weeks in the past.

Interesting...I assumed it was based off of it transitioning it to the "resolved" status. We tend to have items that get comments on them after it moves to this status for maybe updating labels or other custom fields on the tickets.
Seems silly that if a year from now, someone decided to add a comment on a Resolved ticket that it going to show back up on my done column in the kanban board.
