I have a problem with my workflow or something.
When I move my task from "to do" to "in progress" is mandatory to put the original estimate field, after that developers time track but some times they need to move the task to "to do", when they moved it the original estimate is cleared and there is no way to put it back so the task get stuck because is a mandatory field.

My initial thought is the workflow you have configured contains some transitions between steps that is clearing / requiring this field. Please go to Administration > Issues > Workflow and select the workflow that is being used for the specific project. Once you find that workflow, go ahead and select 'Edit'. You should see a screen similar to this:
You can see the transitions that are set in my workflow between 'In Review' and 'Done'. These transitions are responsible for automatically manipulating fields once an issue moves through the workflow. If you click on one of these arrows, you should see a panel popup on the right side. You should see a screen similar to this:
Please look into the Conditions or Post Functions and see if you have any rules setup between 'To Do' and 'In Progress'. Is this where this time tracking field is being updated or cleared?
