So, a while ago I had accidentally created a Business Project for my team, which I ended up liking a lot for the kind of work we're doing. However, I noticed that with the recent updates and features added to Jira Software their Kanban Boards now have a lot of the same features that the Business Projects had.
I think the Business Projects look better, but other than the visual customization options is there any reason to choose one of these types of projects over the traditional Software project?

I think it depends on who will be administering the project.
Business projects are sometimes considered "easier" to manage because they don't offer quite as many options as are found with a Software project Kanban board. There are limitations on filtering and board configuration. Subtasks are locked to display in the same column as their parent issue, even if the subtask status is different. Only one workflow can be shown on the board at a time, which is fine is just one workflow applies to all the issue types in the project. Business projects offer the single-select Category field vs. Software projects (Company Managed) that have the multi-select Components field.
Software projects offer additional functionality that project admins may find confusing, like Releases and Development.
