Can I setup the workflow to have many statuses but when looking at the active sprint board will only show the 3 simple statuses To Do - In Progress - Done?
Go to "board configuration -> columns". You can add, rearrange and remove columns in there, and then put your various status into the right columns.

The board is just a view of your issues. It takes the filter and sorts them into columns by status (i.e. the status you map).
Dragging issues between columns is a visualisation of transitions. The arrows in a workflow that allow you to move between status. If you can't drag an issue from one column to another, then either
Your workflow does not have a transition from the current status into a status that is in the column
It does have a transition, but you do not have permission to use it, or there is a condition preventing it.
Check you have transition permission in the project, that transitions exist, and then look at the "conditions" on the workflow to see if you match them.

Is there an alternative to having more than one status under 1 column? I do not like that when I move an issue I need to make sure I drop it in the correct spot in the column.
