I'm new to our company. we are using Jira. on any given project there is a board that team uses.
I know that when a new board is created there is choice of "scrum" or "kanban".
HOW to tell what any given existing board is (i.e., is it a "scrum" board or a "kanban" board?)
adding to the great and exact information you have received already I'd suggest also taking a look into Atlassian's Agile Coach (https://www.atlassian.com/agile) where you can further information.
I seem to have understood you are familiar with the agile terminology whereas you are looking for specific information how this is done in Atlassian tooling, foremost probably Jira.

Thx for the link, I find the product dogmatic - our way or no way, the 'new' ui confusing and scattered and a bit illogical; but I will review the docs and try to immerse myself into 'atlassianthink' and join the party.

That's an interesting query to read and answer. PFI the details as to how quickly you can differentiate the Scrum and Kanban boards.
Kanban Board:
1. In Jira (I'm referring to Classic Software), on clicking your project board you would see the listed fields: Board name, Roadmap, Backlog, "Kanban board" followed by reports.
2. You will not see "Active Sprints" field.
3. When you click reports, you won't see "Sprint report" option.
