I had a project on Jira that I haven’t accessed in over a year. but now I can’t find it anymore. Could you please help me understand why it's no longer available or how I can retrieve it?

Is that project in a Jira product subscription that you set up? Is the Jira product itself still accessible?
If the Jira product itself is not accessible, be advised that a free product subscription that has no activity for 120 days (meaning nobody logs in and accesses the product) will be canceled by Atlassian. Before they do that they send emails to the Technical Contacts and the Billing Contacts warning that the product has been inactive. All one has to do to keep it active is periodically login and access anything in the product.
After the product subscription is cancelled Atlassian will hold the data for a period of time to give you another chance to reactivate it. If you don't reactivate it, Atlassian permanently deletes the data. At that point there is no way to recover the data.

If the Jira product is still accessible then the Jira administrators for the product may have deleted or archived your project. You would need to contact those people to find out if your project can be restored.
