Each project have multiple issue types (Epic, Story, Task, Bug, etc...)

You can set different wrokflow for aech type if that is what you want.

But you can't set 2 different workflow for the same issue type based on some data in the issue.

I'm not sure I understood your question correctly

but yes, you can have separate workflow for each issue type

e.g. Task --> Workflow for Task

       Epic --> workflow for Epic
