I have some Jira projects in which it is possible to edit/change the summary text of a task afterwards. In other projects it is not possible.
But I haven't found out what the difference between the projects is.
All projects use the same permission scheme.
Do you have an idea?

Of course you can change the summary of every issue type. It's a matter of permissions and screens.
Since all the projects are using the same permissions schemes, you have to see if your role/group have the permission to edit issues. If indeed you have this permission, then you have to see if the field Summary is in the edit issue screen in your issue type screen scheme. If it's not, then you'll will not be able to change it.
