I'm not able to add 'Status' field on the default 'Create Issue' screen:
when I open Settings - Issues - Field Configuration - Configure, there is no field 'Status'
So each time when I create a new ticket - I have to open that and change status to the one I need

Do you mean the actual status of an issue linked to the workflow or is it a custom field?
If this is the actual status then that is normal on a create issue screen. An issue has a flow linked to it and will always be created in that first status and then you can move it thru the flow.

Status is not a field, it is an indicator of where an issue is in its workflow (process).
When you create an issue, it will start in the starting status in the workflow. If you need your issues to start in a different status (you say you're having to transition them straight away), then consider amending the workflow so that they start in the right status. You may need to talk to your admins to get it amended.
