I have noticed recently that when we "create" an issue, instead of all the fields showing on the screen, we are now seeing "more fields (n)"
I think this might have been a change in JIRA, I am fairly certain when I created and tested these screens, all fields always showed up.
Is there a way to force it to show all the fields? Though they are not strictly "required", if the users don't see them, they will skip them (yes, sometimes clicking on a link is just one click too many), and there is relevant data needed in those fields.

This is a new feature that Atlassian has been rolling out since some time in April (or earlier).
