Is there any reason I cannot delete all the unused greenhopper workflow, etc.? Just to reduce the noise...

Hi,

I think that workflow should attached with any one of the JIRA project.

Thanks,

Hemant is right, to delete a workflow, it must not be

a) In use

b) The JIRA system default (which is nothing to do with JIRA Software)

One you've dis-associated a workflow from all it's previous usage, it's perfectly safe to delete it.
