fix version is not showing "unknown" version to choose while creating or editing the issues

I am able to select Released versions and Unreleased versions.

We use to select Unknown version  which got missed now.

Any suggestions, i tried to reset the renderer from auto complete to select multiple and the fix version field is not mandatory

I believe you talking about the "Fix version" field in JIRA issues, is it correct?

The "Unknown" value in the version field means that no versions are selected for it in previous versions of JIRA Cloud and Server.

Now, the same value has been updated to "None" and can be selected by clicking to edit the version field and clicking in "x" icon to remove the versions selected for the field.
