That group by option is feature of team managed projects in Jira.
It has some default grouping options, my guess we cannot change that to add/modify the list
Firstly sub-task is a issue type, so when you mean deleted sub-task field where did you delete it ?
My guess( not 100% sure), we don't have option to configure the "group by" thing as of now

As far as I know there isn't a solution for this as of now, by default in Team Managed project that option are coming.

Okay so that looks like a Jira Software project so not a JSM "portal".
As far as I know it's not a default feature (could be wrong tho), could this be a plugin that was added to your instance that you are aware of? (or is there more in the screenshot that could give more context)
