how do I map issues which are in a workflow status I am about to delete

There shouldn't be a problem - when you delete a status from the workflow it will automatically ask you which status you want the existing issues to be moved to.

You don't need to - JIRA will run you through migrating them when you swap to the new workflow scheme.
