I saw that you opened a ticket with our support related to the same question and they are already helping you there with this question and some other questions as well.
Just to let you know that once the SAML is correctly configured for your instance, the best way to confirm that it's working is by logging out of your Jira instance and login again, because once you add your email on the login page, it will show a message that you need to log in using SSO.
