our "done" tickets column is starting to run a little long.is it possible to reduce the number of tickets being shown to 5 or so?

If you are using a Classic Kanban you should add a sub-filter to not display done issues that have been resolved for say > 7d.
JQL is pretty limited, so there's no LIMIT clause like what you would use in SQL etc. @Jack Brickey 's answer is probably your best bet.
