how do i uninstall atlassian account from the jira softwear?

You've asked two different questions here:

For the one in the subject: Go to Admin -> Manage applications.  Click "remove" next to "Jira Software"

For the one in the description:  Go to Admin -> User management -> find the user you want to remove and remove them from the product-access group, or deactivate the account.

I think it is unclear what you are trying to do.

Atlassian accounts cannot be used to access Server systems (you said server in your tags), so there's nothing to "uninstall" there.

 You can remove access to your system for an account as I said, but that's not "uninstall", on either Cloud or server.

But,  

you say you are cancelling the subscription.  Which suggests you're using a Jira Cloud system.  If I am correct in that assumption, then you don't have t do anything.  At the end of the subscription time, people will not be able to log into it and use it.  After a while, Atlassian will shut it down, and after a bit more time, delete all the data it held.  So you don't need to do anything at all (there's nothing to uninstall on your side)
