If you want to see only the Epics on a particular project, the filter would look like this:
Project = ABC and issuetype = Epic
If you want all open Epics across all projects, the something like:
Issuetype = Epic and StatusCategory != Done
Create add a gadget for the dashboard - maybe something like a Filter Results gadget.

Yes . It is possible. You can add due date in columns for your filters.
You can add filter result gadget on your dashboard and select due date in the columns. so it will reflect on your dashboard.
