is there a Jira and Confluence Training Atlassian Space that I can add? Instead of creating how to guide and instruction? Just looking for basic instructions so we can train the users.

This isn't necessarily an answer to the space question but Atlassian University recently announced a lot of training available at no cost now.

Atlassian don't provide "sandpit" systems directly.  You can sign up for small free Cloud accounts, but if you want to do Server/DC, you'll have to run up your own installations with "developer" licences (these come with commercial licences, so you can ask your admins for them)
