I was wondering if there was anyway where I can see where my custom field is being populated. I looked at the custom field configuration and to my surprise that the field isnt even appearing in the screen. I also tried looking at the workflows associated with it but still no luck.

Use Issue Navigator with the query like this and add the field in the column as well.
"Custom Field" Name is not Empty
It will return a list of all the issues where the custom field is being used. It might not be on a screen but may be it was used in the past or it could be on a transition screen.

Just checked it a moment ago. All the items are new but the workflow doesn't have a transition screen that shows the field.
