We want to install Jira application on our server but We have2 questions regarding with installation:
1. Can we separate application and database servers? I mean that We want to install application on Server 1 and We want to use Server 2 as Database server which SQL server is installed.
2. We saw that only VMWARE is supported for virtualization. Is it possible to install JIRA on Hyper-V server?

1) Yes, you can absolutely run JIRA on one server and the database instance on another. You just need to make sure that JIRA can reach this database over the network. If JIRA ever is unable to contact that database server you can expect JIRA to fail. We would also expect the database instance and the application server to have relatively low latency between each other.
2) Yes it is possible to use other virtual environments to run JIRA, however the supported platforms pages for JIRA do not list these other virtual environments as being supported. Supported platforms - Atlassian Documentation explains this. As such I personally wouldn't recommend using Hyper-V for a production instance of JIRA, but it should be able to work.
