I have created and assigned the following schemes to 32 projects:
out of 32 projects - all classic jira projects, none are next-gen, everything works as expected. For 2 projects there is a field that in missing / not visible from the issue layout.
I have checked all of the project roles, permissions, security assignments - and I can't find where the difference is between all of the projects that show all of the fields, and the 2 that do not. I've tried using Permission helper, but it does not get down tot he level of field visibility on an issue
Does anyone have any go-to advice for where else to look when tracking down why a field isn't showing up?
What is the field which is missing? Is it a standard or custom field? And are you viewing the issues in classic view or the new issue view?
I mention the new issue view as whilst screens control which fields are available to an issue's view - it's the Issue Layout, set via each project's settings which decide which fields are hidden or not.
To view an Issue Layout:

Hi @Ste Wright
It is a custom field, all projects are using the classic view. The issue layout for all issue types does have the field listed in the context fields, and not in the hide when empty section.
I finally found the issue - the 2 projects that were missing the field were not added in the applicable contexts for the configuration scheme.
Appreciate the help!
