Please be informed, when ever you ID is associated with any issue type or you access a project other than your intended project, that would be shown in the projects dropdown. You need to look at this feature as a quick gesture to access the projects you have visited or associated with.
If I were you, I would contact my in-house Jira admin to unlink access to projects I no longer associated or needed.
Note: your Jira admin will have to confirm with your project manager or release engineer to check if your role is no longer needed for those projects. So, the outcome depends on what level of Jira authority your role holds in your organization and Jira project.
