Create transitions from "closed" back to "closed" (or whatever your "end status" are), and give those transitions screens which include the resolution field.

NO NO NO - Never put the resolution field on the edit screen. This breaks your system because issues become closed while open.

How do we remove it once added? I don't seem to have it in my workflow, when i remove it from my fields it doesn't change the transition.

Ok i've got it now.
My other question now is,
when i change the status of my cards to 'done' they are not being crossed off as completed. I must of missed a auto transition? How can I do this?

To get them crossed out, you have to make the workflow set a value in the resolution field on the transition to done. That needs a screen with the resolution on it, or a post-function to set it automatically (that's what the tick box in the original question does)
