We have the subtask blocking active at the "Close" transition. But if not all subtasks are closed, the "Close" button is not displayed. Is it possible to display this button simply as not active or even with the message why?

It's technically not possible to disable the button but display it. If you want some feedback to the user when trying to perform the action, you could have some third party addons (free or paid) which will extend the workflow features. You might want to script it via ScriptRunner or SIL and automatically notify the user, or you can have alternative Validators.
