right now we are using jira structure plugins version 6.6.0 and we got a request to upgrade that structure plugins for the latest version. Is there any impact of that on other jira functionalities. If yes then on which functionalities does it affects?

Upgrading Structure does not cause any changes to the Jira interface or functionality. As already mentioned, whenever you update an add-on, it's useful to check its compatibility with your current Jira version. For example, Structure 7.2, the latest version, supports Jira versions 8.5.0 - 8.19.1.
As for the changes affecting Structure itself, compared to 6.6, 7.2 has a few new major features, the most prominent being Expr 2.0, a significant enhancement of the Structure formula language. We suggest reviewing the Release Notes for 7.0 where it was introduced to learn about important considerations for upgrade and downgrade.
