We created a workflow and when we set the story/issue to a state other than To Do, In Progress or Done they disappear from our Sprint.
Please help!

Usually, the behavior you are facing is because you have not mapped your Workflow Statuses in your Board columns yet.
Please, navigate to your Backlog > Click on the three dots Icon (...) in the right-top of the page > Board settings > Columns and check if your statuses are properly mapped to your columns.
If necessary, create new columns to add your statuses.

Have you mapped all the statuses from the Story and Bug workflows been set to appropriate columns within your scrum board?
When you create a new board, by default only To Do, In Progress and Done columns are represented. Within the Board Setting > Columns. You will be able to add columns and customise the column names themselves from there, as well as drag and drop with Statuses you would like mapped to which column.

If you added new status to the workflow, you need to assign that status to a column in the board settings.
When viewing the board, click the settings in the top right and Board Settings. Then go to Columns and configure your columns to statuses. Ensure there are no unmapped status.
