We are experiencing issues with the email response approval of:

When we respond to Approval requests this way they are not getting registered on the JIRA work item in the Approval section, they are simply being added as comments. Please advise. Is there a JIRA listener that has to be configured to support the email response feature?

no listener need to be configured to support email response processing.
The add-on only requires you have properly configured the mail system as per the provided documentation:https://chicago.herzum.com/confluence/display/HAP/HAP+-+Mail+System+Configuration.
If I have correctly understood the issue you mean that the approval comment is logged but the approval item is not updated (turned in green and approval item details upgraded).
We have already started to investigate by trying to reproduce the bug, until now, without success.
