Importing / Exporting missing data

Good morning, I  work with Zephyr for JIRA in a standalone environment.  I am attempting to export test and issue data, when I do this I am losing certain fields. How do I map or have the ability to determine the fields.  I have done this separately from both JIRA, and Zephyr, with some success, but have no way to automate the process and some data is still missing.

I then attempted to just save / export our instance, I ran into issues when I attempted to reload data that had been over written or deleted there is no mechanism to assist with making sure that data in the current live instance is not overwritten by data from the backup.  I may want some items but not all.  Is there a way to map or create granularity?
