the 30 days free trial is a great way for new users to test our app. Regarding this topic there's one question. Is there any mechanism to prevent users from just starting new evaluations for new add on versions without ever subscribing?

People can extend a trial twice, but after that, they have to negotiate with Atlassian to get the flag reset for more extensions (and the default answer is "no, you've had long enough")
Or they can just request a trial license using a different my.atlassian.com account, no?

Yep, and that's the hideous failure in it.
It'll stop a good chunk of people, who won't think of that, but I do know of some who do do that.
