Our team has some projects that would require Jira but others that are small enough that they just need a fast and easy way of entering tasks and visually tracking progress. In those cases we would want to enter tasks directly through Greenhopper and not use Jira.
Is this possible or do tasks (issues) first need to be entered in Jira?
If we add them through Greenhopper first do they by default get added in Jira?

No, you need Jira. Greenhopper is another way of looking at, and handling, Jira data. That kind of answers the first and third questions - if you do something in Greenhopper, it's still working with Jira data.
However, in later versions of Jira, Greenhopper does support direct entry of issues, and it is possible for an end-user to not use the core of Jira at all on a day-to-day basis. (So, yes, hopefully, that answers your second question!)

GreenHopper is a JIRA plugin, and so it can't be used appart from JIRA. Answering your second question, GreenHopper just gives you a different view for the tickets, so yes, when you add a task through GreenHopper it will be added on JIRA too.
