How do I rename or delete the custom roles I've created?

It’s a bit subtle, if you create a role and assign it, it will be available in the dropdown.

If you remove this role from all users and Save & Close the role will disappear from the dropdown.

Therefore, to delete a role, you simply remove this role from the users that had the targeted role assigned and save.

To rename, create a new role and assign this new one to the users that had the previous role.
