Hi!

Is it possible with this plugin to see everyone included in the To: and CC: field?

This is a supported add-on - you will probably do best to ask the vendor directly: 

https://marketplace.atlassian.com/plugins/com.metainf.jira.plugin.emailissue/server/support

I noted that they also have relatively complete documentation. Good luck!
