Our company has JIRA and Confluence... we have our own server and 1 instance... we are researching adding another instance but we want to make sure that any addon we have bought or will buy will be able to be shared with both instances.

At this time, I understand that you will, yes. But for larger numbers of users, you would still save a lot on the application licences.
