Can the Gantt Start and Finish date fields sync with the Start and Finish date fields on an issue? Our dates are getting out of sync and we cannot edit the Start and Finish Date fields that we pull from the issue into the Gantt. Is there a way to unlock those fields or a work around?

Yes, you can set your custom fields as the Gantt Start and Finish date on Issue view setting( Config icon > Gantt Configuration > Issue view).

Have you able "Non-editable" of Start/Finish date of Issue view configuration?
If you uncheck the option or have issue update permission, you might edit the fields.

According to your screenshot of Ticket configuration, you use WBS Gantt-Chart for Jira Cloud.
As for Cloud, WBS Gantt-Chart doesn't have Start and Finish Date fields mapping function. (This feature is implemented in WBS Gantt-Chart for Jira Server and DC only.)
You can track the future request by the following suggestion ticket of their public tracker.
It would be better to watch or vote the ticket.
