At a customer of ours we have Issue Matrix installed.
Now the customer's wish is that they can sort in an issue on the columns of the issues shown in the matrix field.
Is it possible to realize this?

This functionality is currently not available. However, it has been requested before and is ranked high in our backlog. You can vote for the feature at the feature request at our public JIRA and watch the issue for future news.
