How can I run a script each time I modify something on an issue? I would like to run a script that always check my values. I this moment I can only run script on post when changing the workflow status.

As Steven mentioned, what you are looking for is a Script Listener

You'd write a Script Listener and likely point it to the Issue Created and Issue Updated events.
